Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1/4 tsp (1g) salt
- 1/2 cup (60g) chopped walnuts
- 1 cup (240ml) almond milk
- 1 cup (245g) plain Greek yogurt
- 1/3 cup (80ml) maple syrup
- 2 tbsp (30ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 1 large egg, beaten
- 2 medium (approx. 300g) ripe pears, peeled and diced into 1/2 inch cubes
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
- In a large bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, salt, and walnuts until the spices are evenly distributed.
- In a separate medium bowl, whisk together the milk, Greek yogurt, maple syrup, melted coconut oil, vanilla, and the beaten egg until smooth and velvety.
- Pour the wet mixture over the dry ingredients and stir until just combined.
- Gently fold in the diced pears, ensuring they are evenly distributed but not crushed.
- Spread the batter evenly into the prepared dish.
- Bake for 30–35 minutes, or until the edges are golden-brown and the center is set.
- Let it cool for 5-10 minutes before slicing to allow the structure to firm up.
