Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1/4 tsp (1g) salt
  • 1/2 cup (60g) chopped walnuts
  • 1 cup (240ml) almond milk
  • 1 cup (245g) plain Greek yogurt
  • 1/3 cup (80ml) maple syrup
  • 2 tbsp (30ml) melted coconut oil
  • 1 tsp (5ml) vanilla extract
  • 1 large egg, beaten
  • 2 medium (approx. 300g) ripe pears, peeled and diced into 1/2 inch cubes

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
  2. In a large bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, salt, and walnuts until the spices are evenly distributed.
  3. In a separate medium bowl, whisk together the milk, Greek yogurt, maple syrup, melted coconut oil, vanilla, and the beaten egg until smooth and velvety.
  4. Pour the wet mixture over the dry ingredients and stir until just combined.
  5. Gently fold in the diced pears, ensuring they are evenly distributed but not crushed.
  6. Spread the batter evenly into the prepared dish.
  7. Bake for 30–35 minutes, or until the edges are golden-brown and the center is set.
  8. Let it cool for 5-10 minutes before slicing to allow the structure to firm up.
