Ingredients:

  • 3 large Bosc pears (approx. 1.5 lbs / 680g)
  • 1 tbsp (14g) unsalted butter, melted
  • 3 oz (85g) blue cheese, crumbled
  • 1/3 cup (40g) walnuts, roughly chopped
  • 2 tbsp (42g) honey
  • 4 sprigs fresh thyme leaves
  • 1 pinch flaky sea salt

Instructions:

  1. Preheat your oven to 400°F (200°C). Slice the pears in half lengthwise and use a melon baller to scoop out the center seeds, creating a small well for the cheese. Brush the cut side of the pears with melted butter and place them cut-side up in the baking dish.
  2. Slide the pears into the oven for 12–15 minutes until the edges soften and the natural sugars begin bubbling into a golden glaze.
  3. Remove the pan and fill each pear well with crumbled blue cheese and chopped walnuts. Return to the oven for another 5 minutes, or until the cheese is velvety and the walnuts smell toasted.
  4. Drizzle honey over the melted cheese and scatter fresh thyme leaves and a pinch of flaky sea salt over the top.
