Ingredients:
- 2 large Bosc or Anjou pears, halved and cored
- 8 oz Brie cheese, chilled and sliced into thick rounds
- 3 tbsp honey
- 1/4 cup walnuts, roughly chopped
- 2 tbsp dried cranberries
- 1 tsp fresh thyme leaves
- 1 pinch flaky sea salt
Instructions:
- Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Slice the pears in half lengthwise and use a melon baller or small spoon to scoop out the seeds, creating a small nest in the center of each pear.
- Place the pear halves cut-side up on the baking sheet. Place a thick slice of chilled Brie directly into the hollowed center of each pear.
- Drizzle the honey evenly over the cheese and the exposed pear flesh.
- Bake for 15–20 minutes until the Brie looks slumped and glossy, and the edges of the pears turn a deep golden brown.
- Remove from the oven and immediately top with chopped walnuts, dried cranberries, and fresh thyme. Sprinkle with a pinch of flaky sea salt.
