Ingredients:
- 2 cups (450g) cottage cheese
- 3 large eggs
- ⅓ cup (80ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) oat flour
- 1 tsp (5g) baking powder
- ½ tsp (1g) ground cinnamon
- ¼ tsp (1.5g) salt
- 1 ½ cups (225g) fresh blueberries
Instructions:
- Preheat your oven to 350°F (175°C). Line your 8x8 inch baking dish with parchment paper, leaving a slight overhang on the sides for easy removal.
- Combine the cottage cheese, eggs, maple syrup, vanilla, oat flour, baking powder, cinnamon, and salt in your blender. Process on high until the mixture is completely smooth and velvety.
- Pour the smooth batter into the prepared dish. Gently fold in the fresh blueberries using a spatula, or simply scatter them across the top and press them slightly into the batter.
- Bake for 35–40 minutes until the edges are golden-brown and the center is set. A toothpick inserted into the center should come out clean.
- Let the bake rest for 10 minutes before slicing into 9 squares.
