Ingredients:

  • 2 cups (450g) cottage cheese
  • 3 large eggs
  • ⅓ cup (80ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (90g) oat flour
  • 1 tsp (5g) baking powder
  • ½ tsp (1g) ground cinnamon
  • ¼ tsp (1.5g) salt
  • 1 ½ cups (225g) fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Line your 8x8 inch baking dish with parchment paper, leaving a slight overhang on the sides for easy removal.
  2. Combine the cottage cheese, eggs, maple syrup, vanilla, oat flour, baking powder, cinnamon, and salt in your blender. Process on high until the mixture is completely smooth and velvety.
  3. Pour the smooth batter into the prepared dish. Gently fold in the fresh blueberries using a spatula, or simply scatter them across the top and press them slightly into the batter.
  4. Bake for 35–40 minutes until the edges are golden-brown and the center is set. A toothpick inserted into the center should come out clean.
  5. Let the bake rest for 10 minutes before slicing into 9 squares.
