Ingredients:

  • 1 package (1 lb / 450g) frozen puff pastry, thawed
  • 8 oz (225g) Brie cheese, sliced into thin wedges
  • 2 medium pears, cored and thinly sliced
  • 1 large egg, beaten
  • 2 tbsp (30ml) honey
  • 1 tbsp (8g) sliced almonds
  • 1 sprig fresh thyme

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll the thawed puff pastry onto a lightly floured surface and slice into 18 equal rectangles, approximately 2x3 inches each.
  3. Place one thin slice of Brie in the center of each pastry rectangle, leaving a 1/2 inch border around the edges.
  4. Top the cheese with 2-3 thin pear slices, overlapping them slightly, and gently fold the pastry edges inward to create a rustic border.
  5. Brush the exposed pastry edges with the beaten egg wash.
  6. Bake for 12–15 minutes until the pastry has puffed and the edges are deep golden brown.
  7. Remove from the oven and immediately drizzle with honey, sprinkle with sliced almonds, and garnish with fresh thyme.
