Ingredients:
- 1 package (1 lb / 450g) frozen puff pastry, thawed
- 8 oz (225g) Brie cheese, sliced into thin wedges
- 2 medium pears, cored and thinly sliced
- 1 large egg, beaten
- 2 tbsp (30ml) honey
- 1 tbsp (8g) sliced almonds
- 1 sprig fresh thyme
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unroll the thawed puff pastry onto a lightly floured surface and slice into 18 equal rectangles, approximately 2x3 inches each.
- Place one thin slice of Brie in the center of each pastry rectangle, leaving a 1/2 inch border around the edges.
- Top the cheese with 2-3 thin pear slices, overlapping them slightly, and gently fold the pastry edges inward to create a rustic border.
- Brush the exposed pastry edges with the beaten egg wash.
- Bake for 12–15 minutes until the pastry has puffed and the edges are deep golden brown.
- Remove from the oven and immediately drizzle with honey, sprinkle with sliced almonds, and garnish with fresh thyme.
