Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1/2 tsp (2g) garlic powder
- 1 pinch (1g) salt
- 1 pinch (1g) black pepper
- 1/4 cup (60ml) low-sugar marinara sauce
- 1/4 cup (28g) shredded part-skim mozzarella cheese
- 1 tsp (1g) dried oregano
- 5 slices (15g) turkey pepperoni, halved
- 1 tbsp (15g) diced red bell pepper
- 1 tbsp (5g) fresh baby spinach, chopped
Instructions:
- Mix the base. Combine the cottage cheese, garlic powder, salt, and pepper in a small bowl. Note: Ensure the salt is well distributed to avoid pockets of brine.
- Blend for texture. Pulse the mixture in a blender for 30 seconds until velvety.
- Fill the ramekin. Spread the mixture evenly into the bottom of an 8 oz oven safe ramekin.
- Add the sauce. Spoon the marinara sauce over the cottage cheese base, spreading it to the edges.
- Season. Sprinkle the dried oregano over the sauce.
- Layer toppings. Evenly distribute the turkey pepperoni, diced red bell pepper, and chopped spinach on top.
- Add cheese. Finish with a layer of shredded mozzarella cheese.
- Cook and brown. Choose your method: Air Fryer: Cook at 375°F (190°C) for 8–10 minutes until the cheese bubbles and edges brown. Oven: Bake at 400°F (200°C) for 12–15 minutes until the top is golden. Microwave: Heat on high for 60–90 seconds in 30 second bursts until the mozzarella is melted.
