Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1/2 tsp (2g) garlic powder
  • 1 pinch (1g) salt
  • 1 pinch (1g) black pepper
  • 1/4 cup (60ml) low-sugar marinara sauce
  • 1/4 cup (28g) shredded part-skim mozzarella cheese
  • 1 tsp (1g) dried oregano
  • 5 slices (15g) turkey pepperoni, halved
  • 1 tbsp (15g) diced red bell pepper
  • 1 tbsp (5g) fresh baby spinach, chopped

Instructions:

  1. Mix the base. Combine the cottage cheese, garlic powder, salt, and pepper in a small bowl. Note: Ensure the salt is well distributed to avoid pockets of brine.
  2. Blend for texture. Pulse the mixture in a blender for 30 seconds until velvety.
  3. Fill the ramekin. Spread the mixture evenly into the bottom of an 8 oz oven safe ramekin.
  4. Add the sauce. Spoon the marinara sauce over the cottage cheese base, spreading it to the edges.
  5. Season. Sprinkle the dried oregano over the sauce.
  6. Layer toppings. Evenly distribute the turkey pepperoni, diced red bell pepper, and chopped spinach on top.
  7. Add cheese. Finish with a layer of shredded mozzarella cheese.
  8. Cook and brown. Choose your method: Air Fryer: Cook at 375°F (190°C) for 8–10 minutes until the cheese bubbles and edges brown. Oven: Bake at 400°F (200°C) for 12–15 minutes until the top is golden. Microwave: Heat on high for 60–90 seconds in 30 second bursts until the mozzarella is melted.
