Ingredients:

  • 4 large eggs
  • 1/2 cup (115g) cottage cheese
  • 1 tbsp (14g) unsalted butter
  • 1/4 tsp (1.5g) kosher salt
  • 1/8 tsp (0.3g) cracked black pepper

Instructions:

  1. Whisk the eggs, cottage cheese, salt, and pepper in a medium mixing bowl until the cottage cheese is incorporated and the eggs are combined.
  2. Melt the butter in a non-stick skillet over medium-low heat until it bubbles slightly but does not brown.
  3. Pour the egg mixture into the skillet and let it sit undisturbed for 30 seconds to allow the bottom layer to set.
  4. Using a silicone spatula, gently push the eggs from the edges toward the center, folding slowly to create large, velvety curds.
  5. Remove the pan from the heat when the eggs appear slightly underdone (wet and glossy), allowing residual heat to finish the cooking process.
