Ingredients:
- 2 large flour tortillas, at room temperature
- 1 tsp neutral oil, for misting
- 1 cup freshly shredded Mexican blend cheese
- 1/2 cup cooked shredded chicken breast
- 1 tbsp pickled jalapeños
- 1/4 cup Greek yogurt
- 2 tbsp fresh salsa
Instructions:
- Lay your room temperature tortillas flat on a clean surface. Distribute the freshly shredded cheese evenly over one half of each tortilla, leaving a 1/2-inch border at the edge to prevent leakage.
- Layer the shredded chicken and optional pickled jalapeños directly onto the cheese. Fold the tortillas in half to create a half-moon shape.
- Preheat your air fryer to 375°F (190°C). Lightly mist both sides of the folded tortillas with a neutral oil. Secure the open edge with a toothpick to prevent the air circulation from blowing the tortilla open.
- Place the quesadillas in the air fryer basket. Cook for a total of 8 minutes, using a spatula to flip the quesadillas at the 4-minute mark to ensure even browning.
- Remove from the air fryer when the exterior is mahogany-colored and firm. Slice with a pizza cutter and serve with Greek yogurt and salsa.
