Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, firmly packed
  • 0.5 cup granulated white sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp pure vanilla extract
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 0.5 tsp fine sea salt
  • 2 cups semi-sweet chocolate chips

Instructions:

  1. In a large mixing bowl, beat the softened butter, brown sugar, and white sugar together for about 2 minutes until the mixture looks like wet sand and has lightened slightly in color.
  2. Add the whole egg, the extra egg yolk, and the vanilla extract to the butter mixture. Beat on medium-high speed until the mixture is glossy and smooth.
  3. In a separate small bowl, whisk together the all-purpose flour, baking soda, cornstarch, and fine sea salt.
  4. Slowly add the dry ingredients to the wet mixture. Use a silicone spatula to fold the dough by hand until the last streaks of flour disappear, being careful not to over-mix.
  5. Fold in the semi-sweet chocolate chips until evenly distributed.
  6. Chill the dough in the refrigerator for 30 minutes to allow the fats to solidify and flavors to develop.
  7. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined baking sheets and bake for 10 minutes or until edges are golden but centers remain soft.
