Ingredients:
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, firmly packed
- 0.5 cup granulated white sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp pure vanilla extract
- 2.25 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cornstarch
- 0.5 tsp fine sea salt
- 2 cups semi-sweet chocolate chips
Instructions:
- In a large mixing bowl, beat the softened butter, brown sugar, and white sugar together for about 2 minutes until the mixture looks like wet sand and has lightened slightly in color.
- Add the whole egg, the extra egg yolk, and the vanilla extract to the butter mixture. Beat on medium-high speed until the mixture is glossy and smooth.
- In a separate small bowl, whisk together the all-purpose flour, baking soda, cornstarch, and fine sea salt.
- Slowly add the dry ingredients to the wet mixture. Use a silicone spatula to fold the dough by hand until the last streaks of flour disappear, being careful not to over-mix.
- Fold in the semi-sweet chocolate chips until evenly distributed.
- Chill the dough in the refrigerator for 30 minutes to allow the fats to solidify and flavors to develop.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined baking sheets and bake for 10 minutes or until edges are golden but centers remain soft.
