Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 0.25 tsp (1g) salt
- 1 tsp (2g) ground cinnamon
- 0.5 cup (115g) unsalted butter, softened
- 0.75 cup (150g) granulated sugar
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 0.5 cup (120ml) sour cream
- 3 medium (450g) ripe Bartlett or Bosc pears, peeled and cubed
- 2 tbsp (16g) granulated sugar
- 1 tsp (2g) ground cinnamon
- 1 tbsp (8g) lemon juice
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9-inch springform or cake pan.
- In a medium bowl, toss the cubed pears with lemon juice, 2 tbsp granulated sugar, and 1 tsp cinnamon. Set aside to macerate.
- Cream the softened butter and 3/4 cup sugar together using a hand mixer or stand mixer until the mixture is pale and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract until the batter is velvety and cohesive.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and 1 tsp cinnamon.
- Alternately add the dry flour mixture and the sour cream to the butter mixture, starting and ending with the flour.
- Gently fold in the macerated pears using a rubber spatula, taking care not to overmix.
- Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
