Ingredients:
- 2 lbs fresh firm-ripe pears, peeled and sliced into ½-inch wedges
- ½ cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp unsalted butter, melted
- 1 cup all-purpose flour
- 1 tbsp granulated sugar
- 1 ½ tsp baking powder
- ¼ tsp salt
- ⅓ cup cold unsalted butter, cubed
- ½ cup whole milk
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced pears with lemon juice, sugar, cinnamon, and nutmeg until every slice is evenly coated.
- Pour the melted butter into the 9x9-inch baking dish, tilting to coat the bottom.
- Spread the pear mixture evenly over the butter, pressing down slightly to create a compact layer.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Use a pastry cutter or forks to work the cold cubed butter into the flour until the mixture resembles coarse crumbs (pea-sized lumps).
- Stir in the milk or cream just until a shaggy dough forms. Do not overmix.
- Spoon the dough in dollops over the pears in a rustic, uneven fashion.
- Bake for 60 to 75 minutes.
- Remove from the oven when the fruit is bubbling at the edges and the topping has reached a deep, mahogany-gold color.
