Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 lb ground turkey (93% lean)
  • 1 cup Panko breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup whole milk
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp oil
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions:

  1. Sauté the diced onions and garlic in a teaspoon of oil until translucent and fragrant. Allow them to cool slightly.
  2. In a large bowl, combine the ground beef and ground turkey. Add the breadcrumbs, beaten egg, milk, Worcestershire sauce, and spices. Mix with hands until just combined; do not overwork.
  3. Press the mixture into a 9x5 inch loaf pan or shape into a free-form log on a baking sheet. Bake at 350°F (175°C) for 30 minutes.
  4. While the meat bakes, simmer the ketchup, brown sugar, and apple cider vinegar in a saucepan until thickened.
  5. Brush the glaze generously over the top of the loaf and return to the oven for another 25 minutes, or until a meat thermometer reads 160°F (71°C).
  6. Allow the meatloaf to rest for 10 minutes before slicing.
