Ingredients:
- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1 lb ground turkey (93% lean)
- 1 cup Panko breadcrumbs
- 1 large egg, beaten
- 1/4 cup whole milk
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp oil
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
Instructions:
- Sauté the diced onions and garlic in a teaspoon of oil until translucent and fragrant. Allow them to cool slightly.
- In a large bowl, combine the ground beef and ground turkey. Add the breadcrumbs, beaten egg, milk, Worcestershire sauce, and spices. Mix with hands until just combined; do not overwork.
- Press the mixture into a 9x5 inch loaf pan or shape into a free-form log on a baking sheet. Bake at 350°F (175°C) for 30 minutes.
- While the meat bakes, simmer the ketchup, brown sugar, and apple cider vinegar in a saucepan until thickened.
- Brush the glaze generously over the top of the loaf and return to the oven for another 25 minutes, or until a meat thermometer reads 160°F (71°C).
- Allow the meatloaf to rest for 10 minutes before slicing.
