Ingredients:
- 1 lb lean ground beef (90% lean or higher)
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp neutral oil
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tsp sesame oil
- 1/2 tsp crushed red pepper flakes
- 3 cups cooked jasmine rice
- 2 cups shredded carrots
- 2 cups sliced cucumbers
- 2 stalks green onions, sliced
- 1 tbsp toasted sesame seeds
Instructions:
- Prepare the rice according to package instructions. While the rice simmers, prep the cucumbers and carrots.
- Heat neutral oil in a large skillet over medium-high heat until shimmering. Add lean ground beef in an even layer and sear undisturbed for 3–4 minutes until a deep brown crust forms. Break meat into crumbles and cook until no pink remains.
- Stir in minced garlic and grated ginger, sautéing for 60 seconds until fragrant.
- Pour in the soy sauce, brown sugar, sesame oil, and red pepper flakes. Stir constantly for 2–3 minutes until the sauce bubbles and thickens into a glaze.
- Divide rice into four bowls. Top with glazed beef and arrange shredded carrots and cucumbers on the sides. Garnish with sliced green onions and sesame seeds.
