Ingredients:

  • 1 lb lean ground beef (90% lean or higher)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp neutral oil
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp sesame oil
  • 1/2 tsp crushed red pepper flakes
  • 3 cups cooked jasmine rice
  • 2 cups shredded carrots
  • 2 cups sliced cucumbers
  • 2 stalks green onions, sliced
  • 1 tbsp toasted sesame seeds

Instructions:

  1. Prepare the rice according to package instructions. While the rice simmers, prep the cucumbers and carrots.
  2. Heat neutral oil in a large skillet over medium-high heat until shimmering. Add lean ground beef in an even layer and sear undisturbed for 3–4 minutes until a deep brown crust forms. Break meat into crumbles and cook until no pink remains.
  3. Stir in minced garlic and grated ginger, sautéing for 60 seconds until fragrant.
  4. Pour in the soy sauce, brown sugar, sesame oil, and red pepper flakes. Stir constantly for 2–3 minutes until the sauce bubbles and thickens into a glaze.
  5. Divide rice into four bowls. Top with glazed beef and arrange shredded carrots and cucumbers on the sides. Garnish with sliced green onions and sesame seeds.
