Ingredients:

  • 3 medium zucchinis (approx. 1.5 lbs / 680g), sliced into 1/2 inch rounds
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 2 tbsp fresh basil, torn

Instructions:

  1. Toss the zucchini slices in a large bowl with olive oil, garlic powder, salt, and pepper until every slice is thinly coated.
  2. Arrange the zucchini slices in a 9x13 inch baking dish, overlapping slightly or side-by-side.
  3. Spoon the marinara sauce evenly over the zucchini, spreading it to the edges with the back of a spoon.
  4. Sprinkle the dried Italian seasoning over the sauce, then top with shredded mozzarella and grated Parmesan cheese.
  5. Bake at 400°F (200°C) for 20–25 minutes.
  6. Switch to the broiler for the final 2–3 minutes until the cheese is bubbling and charred in places. Garnish with fresh torn basil.
