Ingredients:
- 3 medium zucchinis (approx. 1.5 lbs / 680g), sliced into 1/2 inch rounds
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1.5 cups marinara sauce
- 1.5 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 2 tbsp fresh basil, torn
Instructions:
- Toss the zucchini slices in a large bowl with olive oil, garlic powder, salt, and pepper until every slice is thinly coated.
- Arrange the zucchini slices in a 9x13 inch baking dish, overlapping slightly or side-by-side.
- Spoon the marinara sauce evenly over the zucchini, spreading it to the edges with the back of a spoon.
- Sprinkle the dried Italian seasoning over the sauce, then top with shredded mozzarella and grated Parmesan cheese.
- Bake at 400°F (200°C) for 20–25 minutes.
- Switch to the broiler for the final 2–3 minutes until the cheese is bubbling and charred in places. Garnish with fresh torn basil.
