Ingredients:

  • 1 cup (90g) rolled oats
  • 1 cup (225g) cottage cheese
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 tbsp (15ml) maple syrup
  • butter or oil (as needed for frying)

Instructions:

  1. Combine the rolled oats, cottage cheese, eggs, vanilla, baking powder, salt, and syrup into a high speed blender.
  2. Pulse on high for 30–60 seconds until the mixture is completely smooth and no oat fragments remain.
  3. Heat a non stick skillet over medium low heat and add a small amount of butter or oil.
  4. Pour roughly 1/4 cup (60ml) of batter per pancake. Note: Use the back of a spoon to gently spread the batter into a circle.
  5. Cook for 3–4 minutes until small bubbles form on the surface and edges look set and matte.
  6. Flip in one quick motion.
  7. Cook for another 2–3 minutes until the other side is deep golden brown.
  8. Remove from heat and let the pancakes rest for one minute. Note: This allows the center to fully set so they don't feel gooey.
