Ingredients:

  • 6 large (approx. 3 lbs / 1.36 kg) pears, peeled, cored, and sliced
  • 2 tbsp (30ml) lemon juice
  • ½ cup (100g) granulated sugar
  • 1 tsp (2.6g) ground cinnamon
  • 1 tbsp (8g) cornstarch
  • ¼ tsp (1.5g) salt
  • 1 cup (90g) rolled oats
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) packed brown sugar
  • ½ cup (113g) unsalted butter, chilled and cubed
  • ½ tsp (3g) ground cinnamon
  • ¼ tsp (1.5g) salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced pears with lemon juice, granulated sugar, cinnamon, cornstarch, and salt until every slice is coated. Pour the pears into a 9x9 inch baking dish, spreading them evenly.
  3. In a medium bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt. Add the chilled, cubed butter and use a fork or pastry cutter to work it into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized chunks.
  4. Scatter the crumble topping evenly over the pears without pressing down. Bake for 35–40 minutes until the fruit juices bubble around the edges and the topping is mahogany-colored gold.
  5. Let the crisp cool for 10 minutes to allow the sauce to set before serving.
