Ingredients:
- 1/2 cup (45g) old-fashioned rolled oats
- 3/4 cup (180ml) unsweetened almond milk
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (15ml) pure maple syrup
- 1 tbsp (12g) chia seeds
- 1 tbsp (16g) natural peanut butter
- 1/4 tsp (1g) ground cinnamon
- 1 pinch (0.5g) sea salt
- 1/4 cup (30g) fresh blueberries
- 1/2 banana, sliced
- 1 tsp (5g) toasted pumpkin seeds
Instructions:
- Combine the rolled oats, milk, vanilla extract, and maple syrup directly in a glass jar. Whisk vigorously for 30 seconds to ensure no clumps of oats are left dry at the bottom.
- Stir in the chia seeds, cinnamon, and sea salt. Mix until the seeds are evenly distributed; if using peanut butter, swirl it in so you get pockets of richness.
- Seal the lid tightly and place the jar in the refrigerator for at least 6 hours, preferably overnight.
- Just before serving, stir the oats once more. Top with the sliced banana and fresh berries.
