Ingredients:

  • 1/2 cup (45g) old-fashioned rolled oats
  • 3/4 cup (180ml) unsweetened almond milk
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15ml) pure maple syrup
  • 1 tbsp (12g) chia seeds
  • 1 tbsp (16g) natural peanut butter
  • 1/4 tsp (1g) ground cinnamon
  • 1 pinch (0.5g) sea salt
  • 1/4 cup (30g) fresh blueberries
  • 1/2 banana, sliced
  • 1 tsp (5g) toasted pumpkin seeds

Instructions:

  1. Combine the rolled oats, milk, vanilla extract, and maple syrup directly in a glass jar. Whisk vigorously for 30 seconds to ensure no clumps of oats are left dry at the bottom.
  2. Stir in the chia seeds, cinnamon, and sea salt. Mix until the seeds are evenly distributed; if using peanut butter, swirl it in so you get pockets of richness.
  3. Seal the lid tightly and place the jar in the refrigerator for at least 6 hours, preferably overnight.
  4. Just before serving, stir the oats once more. Top with the sliced banana and fresh berries.
