Ingredients:
- 4 firm Bosc or Anjou pears (approx. 2 lbs / 900g)
- 2 tbsp unsalted butter, melted
- 1 tsp fresh thyme leaves
- 1/2 tsp flaky sea salt
- 1/4 tsp cracked black pepper
- 4 oz goat cheese, crumbled
- 1 tbsp honey
- 2 tbsp toasted pecans, crushed
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice each pear in half lengthwise and use a small knife or melon baller to scoop out the core and seeds, creating a shallow well in the center of each half.
- Place the pears cut-side up on the baking sheet.
- Brush the cut surfaces and edges of the pears generously with melted butter.
- Sprinkle the thyme, salt, and black pepper evenly across the pears.
- Roast for 20–25 minutes until the edges turn mahogany-colored brown and the fruit is tender.
- Remove the pan from the oven and drop 1 tbsp of crumbled goat cheese into the center of each pear.
- Return to the oven for 3–5 minutes, or until the cheese is softened and slightly golden.
- Remove from heat, drizzle with honey, and top with crushed pecans.
