Ingredients:

  • 12 slices sourdough bread
  • 3 tbsp unsalted butter, softened
  • 6 oz reduced-fat sharp cheddar, shredded
  • 6 oz part-skim mozzarella, shredded
  • 1/4 tsp garlic powder

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Lay out 6 slices of bread on the parchment-lined pan. Spread a thin, even layer of softened butter on the side of the bread that will touch the pan.
  3. Combine shredded cheddar and mozzarella. Pile the cheese blend onto each slice of bread, ensuring the cheese reaches the edges.
  4. Top with the remaining 6 slices of bread and spread butter on the top exterior side of each sandwich.
  5. Place the pan on the center rack of the oven and bake for 10–12 minutes until the bread is deep golden brown and the cheese is bubbling.
  6. Remove from the oven and let the sandwiches rest for 60 seconds to allow the cheese to set before slicing diagonally.
