Ingredients:

  • 4 medium zucchini (approx. 2 lbs / 900g)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lb spicy Italian sausage
  • 2 cloves garlic, minced
  • 1/2 cup marinara sauce
  • 1/4 cup ricotta cheese
  • 2 tbsp chopped fresh parsley
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 pinch red pepper flakes

Instructions:

  1. Slice zucchini in half lengthwise and use a spoon to scoop out the center flesh, leaving a 1/4 inch thick wall.
  2. Toss the empty zucchini boats with olive oil, salt, and pepper. Optionally, par-bake at 400°F (200°C) for 8 minutes.
  3. Brown the spicy Italian sausage in a skillet over medium-high heat until cooked through.
  4. Stir in the minced garlic and sauté for 60 seconds until fragrant.
  5. Stir in the marinara sauce and simmer for 3 minutes until thickened.
  6. Remove from heat and fold in the ricotta cheese and fresh parsley.
  7. Spoon the sausage mixture into each zucchini boat and top with mozzarella and Parmesan cheese.
  8. Bake at 400°F (200°C) for 15-20 minutes until zucchini is tender and cheese is bubbling.
  9. Broil for 2 minutes to achieve a golden-brown finish.
