Ingredients:
- 4 medium zucchini (approx. 2 lbs / 900g)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lb spicy Italian sausage
- 2 cloves garlic, minced
- 1/2 cup marinara sauce
- 1/4 cup ricotta cheese
- 2 tbsp chopped fresh parsley
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 pinch red pepper flakes
Instructions:
- Slice zucchini in half lengthwise and use a spoon to scoop out the center flesh, leaving a 1/4 inch thick wall.
- Toss the empty zucchini boats with olive oil, salt, and pepper. Optionally, par-bake at 400°F (200°C) for 8 minutes.
- Brown the spicy Italian sausage in a skillet over medium-high heat until cooked through.
- Stir in the minced garlic and sauté for 60 seconds until fragrant.
- Stir in the marinara sauce and simmer for 3 minutes until thickened.
- Remove from heat and fold in the ricotta cheese and fresh parsley.
- Spoon the sausage mixture into each zucchini boat and top with mozzarella and Parmesan cheese.
- Bake at 400°F (200°C) for 15-20 minutes until zucchini is tender and cheese is bubbling.
- Broil for 2 minutes to achieve a golden-brown finish.
