Ingredients:
- 1 lb (450g) lean ground beef
- 1 tbsp (15ml) neutral oil
- 1 tsp (6g) kosher salt
- 1/2 tsp (1g) cracked black pepper
- 4 cloves (20g) garlic, minced
- 1 tbsp (15g) unsalted butter
- 1 tsp (2g) dried oregano or thyme
Instructions:
- Place a large cast-iron skillet or heavy-bottomed stainless steel pan over medium-high heat and add the neutral oil. Wait until the oil ripples or just begins to smoke.
- Spread the ground beef in an even layer across the pan. Season immediately with salt and pepper.
- Leave the beef completely undisturbed for 3–5 minutes to allow a deep brown, crispy crust to form on the bottom.
- Use a spatula to break the meat into bite-sized chunks. Stir occasionally for another 3–5 minutes until the beef is cooked through but remains juicy.
- Push the beef to the edges of the pan to create a small well in the center.
- Add the unsalted butter to the center. Once foaming, add the minced garlic and dried herbs.
- Sauté the garlic for 30–60 seconds until fragrant and pale gold.
- Toss the beef back into the center, stirring for 1 minute to coat the meat in the garlic butter.
