Ingredients:

  • 1 lb (450g) lean ground beef
  • 1 tbsp (15ml) neutral oil
  • 1 tsp (6g) kosher salt
  • 1/2 tsp (1g) cracked black pepper
  • 4 cloves (20g) garlic, minced
  • 1 tbsp (15g) unsalted butter
  • 1 tsp (2g) dried oregano or thyme

Instructions:

  1. Place a large cast-iron skillet or heavy-bottomed stainless steel pan over medium-high heat and add the neutral oil. Wait until the oil ripples or just begins to smoke.
  2. Spread the ground beef in an even layer across the pan. Season immediately with salt and pepper.
  3. Leave the beef completely undisturbed for 3–5 minutes to allow a deep brown, crispy crust to form on the bottom.
  4. Use a spatula to break the meat into bite-sized chunks. Stir occasionally for another 3–5 minutes until the beef is cooked through but remains juicy.
  5. Push the beef to the edges of the pan to create a small well in the center.
  6. Add the unsalted butter to the center. Once foaming, add the minced garlic and dried herbs.
  7. Sauté the garlic for 30–60 seconds until fragrant and pale gold.
  8. Toss the beef back into the center, stirring for 1 minute to coat the meat in the garlic butter.
