Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (6g) granulated sugar
- 1 tsp (6g) salt
- 6-8 tbsp (90-120ml) ice water
- 3 lbs (1.36kg) fresh Bartlett or Bosc pears, peeled, cored, and sliced
- ½ cup (100g) granulated sugar
- ½ cup (110g) packed light brown sugar
- 3 tbsp (25g) cornstarch
- 1 tbsp (8g) ground cinnamon
- ¼ tsp (1g) ground ginger
- ¼ tsp (1g) salt
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
Instructions:
- In a large bowl, whisk together the flour, sugar, and salt.
- Add chilled butter cubes to the flour mixture. Use a pastry blender or fork to work the butter into the flour until it resembles coarse crumbs with a few pea-sized lumps remaining.
- Drizzle in ice water one tablespoon at a time, stirring gently until the dough just begins to clump together.
- Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour to prevent the crust from shrinking.
- Toss sliced pears with lemon juice and zest in a large bowl to prevent browning.
- In a separate small bowl, whisk together granulated sugar, brown sugar, cornstarch, cinnamon, ginger, and salt.
- Pour the sugar mixture over the pears and toss gently until every slice is evenly coated in the spice blend.
